The image below shows all the characters’ models compared to the height chart. The same image (without chart) is available on the Team Fortress official wiki, so I am crediting Valve for it.
The Spy and Scout’s heights were also revealed in the last page of the Ring of Fired comic by Valve. It is available here.
Ages - from youngest to oldest
Team Fortress 2 takes place in 1968, and the storyline extends up to 1972.
There is no detailed info on the characters’ ages, so most of the data below is based on guesses and on the lore available via official comics and books.
Scout: 27 (official age of death)
Sniper: 28-32 (lore, and we know that his parents are in their late 50s or 60s)
Demoman: around 30 (lore)
Engineer: 31-40 (lore)
Spy: 45-50 (pure speculation. He is Scout's father)
Pyro: 40-45 (a guess based on the early concept art)
Soldier: 47 (if he was aged 18 at the start of World War II)
Medic: 45-50 (if he was at least 18 at the start of World War II - when he got his medical training. Moreover, his hair is starting to become gray)
Heavy: 45-54 (lore)
The age of the Scout is indicated on the description of his cosmetic “The Track Terrorizer”. However, this is not his official age as it is a fan-made item.
The Scout canon age is 27. In The Naked and the Dead comic by Valve (from page 161 onward), Spy reveals that he is Scout's father, he tried to avoid Scout for 27 years, and he regrets that entirely. - Thanks to Eloise for contacting me with this update.
In “Valve Presents Volume 1: The Sacrifice and Other Steam-Powered Stories”, Demoman’s mother exclaims: “Mark me boy: No demoman worth his sulfur ever had an eye in his head past thirty!”
Overall, the Demoman might be just under 30 or slightly older than that. You can find the book preview here.
The Engineer built the Sentry under contract from TF Industries in 1965, and he spent “ten years as a roughneck in the west Texas oil fields”. If he was 18 before this date, he is around 31 years old.
Nevertheless, he also got eleven hard science PhDs. Assuming he took them all at once, he would be around 38-40.
There is absolutely no info on the Pyro. All we have is this early concept art by Valve where he is portrayed as a male. I would say that he is about 40-45 years old.
The Sniper‘s biological father states that he was born a decade after New Zealand sunk, which happened 40 years before the events in the comics, according to Mrs. Pauling.
The Heavy was sent to a north Siberian Gulag in September 1941 with his mother and sisters. (Meet The Director comic by Valve)
If he was under the age of 18, he would be around 45 years old when the game events take place. However, the Heavy has a PhD in Russian literature (which requires about 9 years) so if he was sent to the Gulag after obtaining it, he might be 54 years old.
